  • 290 grams water
  • 160 grams sourdough starter
  • 8 grams salt

Instructions

  1. In a large mixing bowl, combine water, sourdough starter, and salt.
  2. Gradually add all-purpose flour and mix until fully incorporated. Cover and let rest for 30 minutes.
  3. Perform stretch and folds by grabbing an edge of the dough, stretching it up, and folding it under. Rotate the bowl and repeat four times. Let rest for another hour with additional stretches every 20 minutes.
  4. Allow the dough to rise at room temperature for 3-4 hours until nearly doubled in size.
  5. Shape the dough into a ball and place it in a floured bread basket with the pinched side facing up. Let it rise for another 2 hours.
  6. Preheat your oven halfway through this final rise. Once ready, transfer the dough onto parchment paper, score an X on top, and bake in a preheated Dutch oven for 40 minutes (30 covered, 10 uncovered).
