  • 4 medium sweet potatoes, peeled and cubed
  • 1 lb (450g) chicken or beef sausage, crumbled
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with 1 tablespoon olive oil, salt, pepper, and paprika. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. In a skillet over medium-high heat, crumble the sausage and cook until browned (about 6-8 minutes). Remove from skillet.
  4. Add another tablespoon of olive oil to the skillet and sauté minced garlic for 1-2 minutes.
  5. In a bowl, whisk together honey, soy sauce, Dijon mustard, apple cider vinegar, and red pepper flakes (if using). Pour into the skillet with garlic and simmer for 2-3 minutes.
  6. Return sausage to the skillet and stir to coat with sauce; allow to simmer an additional 2 minutes.
  7. Combine roasted sweet potatoes with the sausage mixture in the skillet and toss well.
