  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage (or turkey/chicken sausage)
  • 1 small onion, finely diced
  • 2 medium carrots, finely diced
  • 2 celery stalks, finely diced
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bay leaf
  • ½ teaspoon smoked paprika
  • 2 teaspoons dried Italian seasoning
  • 4 medium potatoes, diced into ½-inch cubes
  • 6 cups chopped kale (or other greens)
  • ½ cup shredded Parmesan cheese
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Brown the ground sausage until golden.
  2. Remove the sausage with a slotted spoon and set aside. In the same pot, sauté onion, carrots, celery, bell pepper, and garlic for about 7–8 minutes.
  3. Return the sausage to the pot; add chicken broth, bay leaf, smoked paprika, Italian seasoning, potatoes, and greens. Stir well.
  4. Let everything simmer for about 15 minutes until potatoes are tender.
  5. Stir in Parmesan cheese and lemon juice before serving. Season to taste.
