  • 2 sheets refrigerated pie crusts
  • 4 large eggs
  • 4 slices cooked turkey, chopped
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped chives (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together 2 eggs, milk, salt, and pepper. Scramble the mixture in a non-stick skillet over medium heat until just set.
  3. Roll out the pie crusts and cut into 8 rectangles; place four on the prepared baking sheet.
  4. Divide the scrambled eggs, chopped turkey, and cheddar cheese among the rectangles, leaving a border for sealing.
  5. Top each filled rectangle with another piece of dough and seal the edges with a fork. Brush the tops with beaten egg.
  6. Bake for 22-25 minutes until golden brown. Garnish with chives if desired.
