  • 7 medium-sized potatoes (washed, skin on)
  • ¼ cup unsalted butter (melted)
  • 1 teaspoon olive oil
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon minced garlic
  • dried oregano to taste
  • smoked paprika to taste
  • sea salt to taste
  • black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a large baking dish.
  2. Clean and dry the potatoes thoroughly. Place one potato lengthwise on a cutting board with chopsticks on either side as guides. Slice without cutting all the way through. Repeat for all potatoes.
  3. Arrange the potatoes cut-side up in the baking dish. Brush with melted butter and olive oil between slices.
  4. In a bowl, mix sea salt, black pepper, grated Parmesan cheese, dried oregano, minced garlic, and smoked paprika. Sprinkle evenly over the potatoes.
  5. Bake for about 60 minutes until tender, basting occasionally with melted butter from the dish.
  6. Allow resting for 5 minutes before serving hot.
