  • 1 small onion (finely diced)
  • ¾ cups chopped unsalted pistachios
  • 2 cups heavy cream
  • 500 grams pasta (penne or rigatoni)
  • 2 tbsp grated cheese (Parmigiano or Pecorino Romano)

Instructions

  2. Cook pasta in salted boiling water until al dente, reserving some cooking water before draining.
  3. Sauté turkey strips in the same skillet until crisp; set aside.
  4. Cook diced onion until soft; add half of the pistachios.
  5. Pour in heavy cream and heat through.
  6. Combine the cooked pasta and turkey strips with the cream sauce, adding reserved pasta water as needed for consistency.
  7. Stir in grated cheese and serve immediately, garnished with remaining pistachios.
