1 cup tomato sauce
1¼ cups heavy cream (room temperature)
6 tbsp tomato paste
2½ tsp curry powder
2 tsp chili powder
1 tbsp minced garlic
1 tbsp grated ginger
½ tsp cumin
½ tsp salt

Instructions
In a sauté pan, melt the butter over medium-high heat. Add diced onions, garlic, ginger, curry powder, chili powder, and salt. Sauté for 2-3 minutes until fragrant.
Transfer the mixture to a blender along with tomato sauce and tomato paste. Blend until smooth.
Place chicken breasts in the slow cooker and pour the blended sauce over them. Cover and cook on high for 2½ – 3 hours.
Once cooked, shred the chicken into bite-sized pieces and return to the slow cooker.
For thickening, mix remaining cream with cornstarch in a bowl; stir this mixture into the sauce.
