  • 1/2 cup butter (room temperature)
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup graham cracker crumbs
  • 2 giant milk chocolate bars (7 oz each)
  • 1 jar vegan marshmallows crème (7 oz)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9" x 9" baking pan with parchment paper.
  2. In a stand mixer, beat together the butter, granulated sugar, and light brown sugar until creamy. Add the egg and vanilla; mix until combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients until just combined, then stir in the graham cracker crumbs.
  4. Press about two-thirds of the dough into an even layer in the prepared pan. Layer the chocolate bars on top and spread the vegan marshmallows crème evenly over them. Use the remaining dough to cover.
  5. Bake for 20–25 minutes or until golden brown on top. Allow cooling before slicing into bars.
