  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 & 1/2 cups all-purpose flour
  • 1/2 cup finely crushed graham crackers
  • 3/4 tsp baking soda
  • 5 standard chocolate bars (like Hershey's)
  • 1 & 1/2 cups vegan marshmallow fluff

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar in a mixing bowl until smooth. Mix in the egg and vanilla extract.
  3. In another bowl, combine the flour, crushed graham crackers, salt, and baking soda. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Press half of the cookie dough into the prepared pan. Freeze for a few minutes while you prepare the filling.
  5. Layer broken chocolate pieces over the dough, then spread vegan marshmallow fluff on top. Place the remaining cookie dough on top.
  6. Bake for about 25 minutes or until golden brown around the edges. Allow to cool completely before slicing.
