  • 2 teaspoons olive oil
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 large onion (thinly sliced)
  • 4 cloves garlic (minced)
  • 1 teaspoon fresh thyme (chopped)
  • 1 pinch salt (to taste)
  • 1/2 cup chicken broth (divided)
  • 3/4 cup buttermilk (or heavy cream)
  • 1 teaspoon flat-leaf parsley (fresh and chopped for garnish)

Instructions

  1. Season beef chops with onion powder, garlic powder, cayenne, seasoning salt, and cracked pepper.
  2. Heat olive oil in a skillet over medium-high heat; sear beef chops for 3-4 minutes per side until browned. Remove from skillet.
  3. In the same skillet, add olive oil and butter; sauté sliced onions until soft (5-7 minutes). Add minced garlic and thyme.
  4. Sprinkle flour over onion mixture; stir well. Gradually add chicken broth while stirring to avoid lumps. Mix in buttermilk until smooth and let simmer until thickened.
  5. Return beef chops to skillet; cover and cook on low heat for 15-20 minutes until fully cooked through.
