  • 1 and 1/3 cups granulated sugar
  • 1/3 cup brown sugar (packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 and 1/2 teaspoons cream of tartar
  • 1/3 cup granulated sugar (for rolling)
  • 1 and 1/2 tablespoons cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl or stand mixer, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and vanilla extract; mix until fully combined.
  4. In another bowl, combine flour, baking soda, salt, and cream of tartar; gradually mix into wet ingredients until just combined.
  5. Shape dough into balls (1.5 to 2 inches), then roll in cinnamon-sugar mixture.
  6. Place on prepared baking sheets with spacing between cookies.
  7. Bake for 9-11 minutes until edges are set but centers look slightly underbaked.
  8. Allow to cool on the pan for a few minutes before transferring to wire racks.
