  • 1/4 teaspoon salt
  • 1 cup vegan butter, softened (for frosting)
  • 3 teaspoons vanilla paste (or extract)
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar (for frosting)
  • 3 1/4 cups powdered sugar

Instructions

  1. Cream together softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until fluffy.
  2. In another bowl, whisk together flour, baking powder, pumpkin pie spice, and salt.
  3. Gradually mix dry ingredients into wet ingredients until just combined.
  4. Chill dough for at least 30 minutes.
  5. Preheat oven to 350°F (177°C). Scoop dough onto a lined baking sheet and flatten slightly.
  6. Bake for 10–12 minutes and let cool.
  7. For frosting, whip together vegan butter, powdered sugar, cinnamon until smooth; pipe onto cooled cookies.
