  • 125 g filtered water
  • 100 g sourdough starter (at its peak)
  • 325 g bread flour
  • 10 g sea salt
  • 50 g unsalted butter (melted)
  • 2 tbsp olive oil
  • 46 cloves garlic (minced)
  • 1/4 tsp salt
  • Optional: 2 tbsp chopped parsley

Instructions

  1. In a mixing bowl, combine filtered water and sourdough starter. Stir well.
  2. Gradually add bread flour and sea salt until a shaggy dough forms.
  3. Knead the dough on a floured surface for 5-10 minutes until smooth and elastic. Shape into a ball.
  4. Place the dough in a bowl, cover with a damp cloth, and let it rise for 4-6 hours or until doubled in size.
  5. Gently deflate the dough and divide it into about 12 pieces. Shape each piece into a knot and place on a parchment-lined baking sheet.
  6. Cover again for a second rise of 30-45 minutes.
  7. Preheat the oven to 375°F (190°C). Bake for 20-25 minutes until golden brown.
  8. Meanwhile, melt butter with olive oil and minced garlic over low heat. Brush this mixture onto warm knots after baking.
