  • 12 oz rotini pasta
  • 1 can black beans (drained and rinsed)
  • 1 can corn (drained)
  • 1 cup diced bell pepper
  • 1 cup diced red onion
  • 1 cup halved cherry tomatoes
  • ½ cup chopped cilantro
  • 2 cups grilled chicken (chopped)
  • 1 cup chipotle ranch dressing

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water; allow to drip dry.
  2. Prepare the vegetables by draining and rinsing the black beans and corn. Dice the bell pepper and red onion, and halve the cherry tomatoes.
  3. In a large mixing bowl, combine cooked pasta, black beans, corn, diced bell pepper, red onion, halved tomatoes, cilantro, and grilled chicken.
  4. Pour in the chipotle ranch dressing and stir until all ingredients are evenly coated.
  5. Cover and chill in the refrigerator for at least one hour before serving to enhance flavor.
