  • 1/2 cup oil-packed sun-dried tomatoes (drained and chopped; reserve some oil)
  • 1 small red onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and pepper to taste
  • 1 cup low-sodium vegetable or chicken broth
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter

Instructions

  1. Boil salted water in a large pot and cook the whole-wheat spaghetti until al dente, following package instructions. Drain.
  2. In a skillet over medium heat, melt butter. Sauté chopped red onion until translucent, then add minced garlic and crushed red pepper flakes. Cook for an additional minute.
  3. Stir in chopped sun-dried tomatoes with their reserved oil and pour in the broth. Simmer briefly before mixing in sour cream until combined.
  4. Add the drained spaghetti into the skillet and toss to coat well with the sauce.
  5. Finally, mix in fresh spinach until wilted, then stir in grated Parmesan cheese, seasoning with salt and pepper as needed. Serve immediately.
