  • 4 salmon fillets (or 1 lb salmon, cut into cubes)
  • 3 tbsp sriracha sauce
  • 2 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 2 cups cooked jasmine rice
  • 2 cups cauliflower florets
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 tbsp chopped green onions
  • 1 tbsp chopped cilantro
  • 1 tsp sesame seeds

Instructions

  1. Prepare the marinade by whisking together sriracha sauce, honey, soy sauce, minced garlic, lime juice, and sesame oil.
  2. Marinate the salmon in half of the mixture for 15 minutes.
  3. Toss cauliflower florets with olive oil, salt, and pepper; roast in a preheated oven at 400°F for 20–25 minutes.
  4. Cook the salmon in a non-stick skillet over medium-high heat until caramelized; pour reserved marinade over it to glaze.
  5. Assemble bowls by placing jasmine rice at the base, topped with roasted cauliflower and glazed salmon.
  6. Garnish with chopped green onions and cilantro before serving.
