  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 3 cups fresh or frozen corn kernels
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste
  • 1/2 cup Greek yogurt
  • 1/2 cup sour cream
  • 1 cup fresh cilantro leaves and stems
  • 2 tablespoons lime juice
  • 1 clove garlic
  • 1/2 jalapeño, seeds removed
  • 1/4 teaspoon salt
  • 2 cups cooked rice
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup crumbled cotija or feta cheese
  • Lime wedges for serving
  • Additional cilantro for garnish

Instructions

  1. Marinate the steak with olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper for at least 30 minutes.
  2. Blend Greek yogurt, sour cream, cilantro, lime juice, garlic, jalapeño (optional), and salt until smooth.
  3. Preheat the oven to 425°F (220°C) and roast corn mixed with olive oil and spices for 15–20 minutes.
  4. Sear the marinated steak in a hot skillet for about 4–5 minutes per side until desired doneness.
  5. Let the steak rest before slicing against the grain.
  6. Assemble bowls by layering cooked rice, steak slices, roasted corn, avocado slices, cherry tomatoes, red onion, and drizzle with cilantro cream sauce.
