  • 3 cloves garlic (minced)
  • 3 cups baby spinach (chopped)

  • 2 yellow bell peppers (halved)
  • 1 ½ cups ricotta cheese
  • 6 tablespoons grated Parmesan cheese
  • 10 ounces grape or cherry tomatoes
  • Fresh parsley or basil for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place tomatoes in a baking pan, drizzle with oil, and season with salt and pepper.
  3. In a skillet, heat remaining oil over medium heat. Sauté onion until translucent; add garlic and spinach until wilted.
  4. In a bowl, mix ricotta, Parmesan, sautéed veggies, salt, and pepper.
  5. Stuff the bell pepper halves with the mixture and place alongside the tomatoes in the pan.
