  • 1 pound ground beef
  • 1 cup diced onion
  • 2 cups diced bell peppers (red, orange, or yellow)
  • 14 ½ oz can petite diced tomatoes
  • 15 oz can tomato sauce
  • 3 cups water
  • 2 cups low sodium beef broth
  • ⅔ cup long grain white rice
  • ½ teaspoon dried parsley
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • 1 bay leaf
  • ¼ teaspoon red pepper flakes

Instructions

  1. In a large pot over medium heat, heat the olive oil and brown the ground beef for about 5 minutes. Add diced onion and minced garlic; sauté until softened.
