  • 5 tbsp vegetable oil
  • 2 eggs, lightly beaten
  • 3 tbsp cornflour (cornstarch)
  • 90 g (3/4 cup) plain flour (all-purpose flour)
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic salt
  • 2 tsp paprika
  • 3 skinless chicken breast fillets, chopped into bite-size chunks
  • 1 large onion, chopped
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp minced ginger
  • 150 ml (2/3 cup) tomato ketchup
  • 2 tbsp malt vinegar
  • 6 tbsp dark brown muscovado sugar
  • 475 g (17 oz) canned pineapple chunks in juice

Instructions

  1. Heat vegetable oil in a wok or large frying pan until hot.
  2. Set up three shallow bowls: one with beaten eggs, one with cornflour, and the last with a mixture of plain flour, salt, pepper, garlic salt, and paprika.
  3. Coat each chicken piece first in cornflour, then dip in egg, followed by dredging in seasoned flour.
  4. Fry the coated chicken in hot oil for about 6–7 minutes until golden brown; drain on paper towels.
  5. In another pan, stir-fry onions and peppers for about 3 minutes; add garlic and ginger and cook for another minute.
  6. Stir in ketchup, malt vinegar, brown sugar, and canned pineapple with juice; bring to a boil and simmer until thickened.
  7. Toss the fried chicken in the sauce to coat evenly.
  8. Serve over egg fried rice or boiled rice with a sprinkle of sesame seeds.
