  • 250 g turkey strips (chopped)
  • 1 tablespoon olive oil
  • 175 g green lentils
  • 1 onion (diced)
  • 2 medium carrots (diced)
  • 4 ribs celery (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon chopped fresh rosemary
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 6 mini potatoes (quartered)
  • 1 litre vegetable stock
  • 100 g baby spinach
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a cast iron or soup pot over medium heat. Add turkey strips and cook until browned. Remove and set aside.
  2. In the same pot, sauté diced onion, carrots, celery, and garlic until softened.
  3. Stir in rosemary, oregano, thyme, lentils, and potatoes. Mix well to coat.
  4. Pour in vegetable stock; bring to a boil then simmer for about 20 minutes until lentils are tender.
  5. Blend a portion of the soup for creaminess and return it to the pot.
  6. Stir in lemon juice and spinach; return turkey to the pot before serving.
