  • 100 g granulated sugar
  • 100 g dark brown sugar
  • 1 egg (57-60 g with shell)
  • 1 tsp vanilla extract
  • 230 g all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp instant espresso powder
  • 1/2 tsp salt
  • 180 g mascarpone cheese
  • 90 g confectioners sugar
  • 20 g agave or honey
  • 120 g heavy cream
  • 1 tbsp cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 180°C (350°F) to ensure even baking.
  2. In a mixing bowl, cream together butter, granulated sugar, and dark brown sugar until light and fluffy. Add the egg and vanilla extract; mix well.
  3. In another bowl, whisk together flour, baking powder, baking soda, instant espresso powder, and salt. Gradually add this to the wet mixture until just combined.
  4. Scoop tablespoon-sized amounts of dough onto a lined baking sheet, leaving space between each cookie. Bake for about 11 minutes until golden around the edges but still soft in the center.
  5. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
  6. In a clean bowl, beat mascarpone cheese with vanilla extract, confectioners sugar, agave or honey, and heavy cream until smooth and fluffy.
  7. Once cooled, top each cookie with a dollop of mascarpone cream and dust with cocoa powder before serving.
