  • 17.6 oz broccoli
  • 1 cup dairy-free cooking cream
  • 1 cup vegetable broth
  • 3.5 oz vegan butter
  • 3 tbsp flour
  • 6 tbsp nutritional yeast flakes
  • 1 tsp rosemary (dried)
  • 1 tsp oregano (dried)
  • 1 tsp thyme (dried)
  • 2 tsp paprika powder
  • 1 clove of garlic (pressed)
  • salt and pepper (to taste)
  • 1 cup vegan grated cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice potatoes into thin rounds; chop broccoli into bite-sized florets.
  3. In a saucepan over medium heat, melt vegan butter; gradually whisk in flour to form a paste.
  4. Slowly add vegetable broth while whisking until smooth, then stir in dairy-free cream, nutritional yeast, garlic, spices, salt, and pepper until thickened.
  5. Layer half the potato slices in a baking dish followed by half the broccoli and half the sauce; repeat layers.
  6. Top with vegan cheese and cover with foil.
  7. Bake for 30 minutes covered; remove foil and bake for an additional 15 minutes until golden brown.
