  • 2.5 cups sweet potatoes (cut into small cubes)
  • 1 yellow onion (quartered)
  • 23 cloves garlic (unpeeled)
  • 1/2 cup raw cashews
  • 1/4 cup nutritional yeast
  • 1 lb macaroni pasta
  • 1 cup unsweetened cashew milk
  • 1 cup low sodium vegetable broth
  • paprika
  • sea salt
  • dried thyme (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking tray with parchment paper.
  2. On the tray, combine sweet potatoes, onion, and unpeeled garlic. Sprinkle with salt and drizzle with olive oil if desired. Roast for 15–20 minutes until fork-tender.
  3. Once roasted, peel the garlic and blend it along with the sweet potatoes, onion, cashews, nutritional yeast, spices, milk, and broth until smooth.
  4. Cook the macaroni according to package instructions until al dente; drain.
  5. Combine the pasta with the creamy sauce until evenly coated.
  6. For an optional crispy topping, broil in an oven-safe dish for 2–3 minutes.
