  • 4 Medium Flour Tortillas
  • 1 Large Sweet Potato
  • 2 Avocados
  • 1/2 Cup Black Beans (Rinsed and Drained)
  • 1/4 Cup Corn (Rinsed and Drained)
  • 1 Mini Red Pepper
  • 1 Mini Orange Pepper
  • 1 Tbsp Taco Seasoning
  • 1 Cup Cheddar or Pepper Jack Cheese
  • 1 Tbsp Butter (For Pan Frying)
  • 2 Tsp Olive Oil (Divided)
  • Fresh Cilantro
  • Lime Juice
  • Your Favorite Salsa
  • Sour Cream

Instructions

  1. Prepare the vegetables by peeling and dicing the sweet potato and chopping the mini peppers.
  2. Heat olive oil in a non-stick skillet over medium heat, cook sweet potatoes until tender (8-10 minutes).
  3. In a mixing bowl, combine cooked sweet potatoes with black beans, corn, peppers, taco seasoning, and mash one avocado.
  4. Spread filling on half of each tortilla, sprinkle cheese on top, and fold.
  5. In the skillet with melted butter, cook quesadillas for about 3-4 minutes on each side until golden brown.
  6. Cut into wedges and serve hot with cilantro, lime juice, salsa, and sour cream.
